    Carla's Favorite Taco Salad

    I made this for Carla and I when she was home on vacation. We love it and its very healthy

    List of Ingredients




    1 can black beans
    2 TB of taco seasoning
    1 med to large tomato chopped
    1 large avacado chopped
    1/2 large sweet onion chopped
    2 heads of organic romaine lettuce
    2 handfuls of organic corn tortilla chips
    2 limes

    Recipe



    Open beans and drain half of the juice out and put into a small cokking pan. Add taco seasoning and simmer for 7 to 10 minutes on medium heat. Set aside to cool while you chop all the veggies. After chopping veggies , throw them in a mixing bowl along with tomato and onion. Toss well to mix. add the avacado to the salad and squeeze lime juice making sure to cover all the avacado so they don't start browning, then tos again. Put 1/2 of themixture in a salad bowl and top with a few good spoonfuls of your black beans and then crumble tortilla chips on top. Enjoy
