    Vegan taco salad

    Recipe Introduction

    I made this one year for Carla and I and we enjoyed it so much. Carla had come home and spent the week. We had so much fun cooking and eating.

    List of Ingredients

    1 cup black beans
    2 TB of taco seasoning
    1 med tomato chopped
    1 large avocado chopped
    1/2 sweet onion chopped
    2 heads of romaine lettuce
    2 handfuls of corn tortilla chips
    2 limes

    Recipe

    Open beans and drain about half of liquid out and add to a small pan, add taco seasoning, simmer for 7 to 10 minutes. Set aside to cool while you chop all the veggies. Wash lettuce and tear into bite size pieces, throw in a mixing bowl, along with tomato and onion. Then toss to mix ingredients well. add the avacado to the salad and squeeze lime juice and sprinkle over the avocado so they don't brown. Put 1/2 mixture in a salad bowl and top with spoonfuls of black beans and then crumble tortilla chips on top, Add some vegan shredded cheese on top
