Found this recipe I had filed away and thought it would be a good
addition for cold snowy nights or football games.
List of Ingredients
Armadillo Eggs
2 jars ( 16 ounces each ) whole pickled jalapeno peppers
4 cups shredded cheddar cheese, divided
1 lb pork sausage ( uncooked )
1-1/2 cps biscuit/baking mix
3 eggs, lightly beaten
2 envelopes pork-flavored seasoned coating mix. ( Shake & Bake )
Cut each jalapeno in half lenghtwise, remove seeds and stem. Stuff each
pepper with about 1 tbs of the cheese.
In a bowl, combine sausage, biscuit mix and remaining cheese. Shape
about 2 tbs of the mix around each pepper.
Dip the pepper into the eggs and then roll in the coating mix. Place on
a baking sheet coated with non-stick spray and bake at 350F for 35-40
minutes or until golden brown. You may use any of your favorite dips for
