    Bacon + Tomato Biscuit Cups

    Little biscuit cups with a mixture of bacon and tomato inside.

    Bacon + Tomato Biscuit Cups

    8 slices bacon
    1 chopped tomato
    1/2 chopped onion
    3 ounces shredded Swiss cheese
    1/2 cup mayonnaise
    1 teaspoon dried basil
    1, 16 ounce can refrigerated buttermilk biscuit dough

    Heat oven to 375 degrees F. (190 degrees C).
    Lightly grease a mini muffin pan.
    In a skillet over medium heat, cook bacon until evenly
    brown. Drain on paper towels. Crumble into a medium mixing
    bowl.
    Mix with tomato, onion, cheese, mayonnaise and basil.
    Separate biscuits. Then separate into halves, horizontally.
    Place each 1/2 into prepared mini muffin pan cups.
    Fill each biscuit halfway with bacon mixture.
    Bake for 10 to 12 minutes, or until golden brown.
