    Cream Cheese Pineapple Ball

    16oz. cream cheese, softened
    8 1/2oz. can crushed pineapple, well drained
    1 cup + 1 cup finely chopped celery, separated
    1 teaspoon salt
    1/4 teaspoon ground black pepper
    1/4 cup chopped sweet red or green pepper
    2 tablespoons chopped green onion, (scallions)

    Mix cheese, pineapple, 1 cup of the celery, salt, green
    pepper, black pepper and onion together in a bowl.
    Roll into a ball shape.
    Sprinkle the other 1 cup of celery on foil, plastic wrap
    or wax paper. Roll the cheese ball around on top of
    the celery.
    Seal with plastic wrap and let chill overnight.
    Serve with crackers or little breads or fresh vegetables.
