    List of Ingredients




    1 tablespoon Olive oil
    1/2 finely chopped medium onion
    2 - 4 finely chopped garlic cloves
    1 pound coarsely chopped fresh mushrooms
    1/4 cup dry sherry
    salt and ground black pepper to taste
    3 tablespoons freshly grated Parmesan cheese
    2 teaspoons lemon juice

    Recipe



    Heat the oil in a large frying pan over a medium heat.
    Saute the onions and garlic until tender but not brown,
    about 10 minutes.
    Add the mushrooms, sherry, salt, and pepper.
    Stirring frequently, uncovered, cook until the mushrooms
    are very tender and most of the liquid has evaporated,
    approximately 10 minutes.
    Let cool to room temperature.
    Combine the mushroom mixture with the cheese and lemon
    juice in a blender/food processor. Blend until smooth.
    Transfer to a serving bowl.
    Refrigerate for at least 2 hours before serving.
    Serves 6 - 8.
    Good with toast points, melba toast, pita bread, or thinly
    sliced French bread.
