    Molasses Crumb Shortcake Squares

    Molasses Crumb Shortcake Squares

    4 cups flour
    2 cups light brown sugar
    3/4 cup vegetable oil
    1/2 teaspoon salt
    1 cup baking molases
    2 1/4 cups boiling water
    1 level teaspoon baking soda

    Preheat oven to 350 degrees F. Lightly grease
    and flour a 9x13x2 inch baking pan. Mix
    together the flour, sugar, oil and salt until
    crumbly. Set aside 1 cup of crumbs. Mix molasses,
    water and baking soda together. This should foam
    up so make sure you have a large enough container
    for mixing. Blend flour mixture and molasses
    mixture until mixed...it is not necessary to blend
    smooth. Pour into baking pan and sprinkle with
    reserved crumbly mixture. Bake for 35 to 40 minutes.
    Let cool, then cut into squares to serve.
