    grilled - Corn on the Cob, southwestern style

    1/3 cup butter or margarine
    2 Tablespoons snipped parsley or cilantro
    1/4 teaspoon salt
    1/4 teaspoon ground red pepper
    6 fresh ears of corn

    In a small saucepan melt butter.
    Stir in parsley, salt, and ground red pepper.
    Remove the husks from fresh ears of corn.
    Scrub ears with a stiff brush to remove silks.
    Rinse ears; pat dry with paper towels.
    Heat grill medium to medium/high.
    Place each ear of corn on a piece of heavy duty foil.
    Brush ears with butter mixture.
    Wrap corn securely in foil.
    Place on grill and cook directly for about 20 minutes
    or until kernels are tender, turning frequently.
    Makes 6 servings.
