    grilled - Smoked Salmon

    1 salmon fillet
    2 tablespoons lemon juice
    6 drops or less of liquid smoke

    Rub the salmon with the lemon juice and a few drops of liquid smoke.
    Refrigerate for 30 minutes or longer.
    Preheat the grill at low setting.
    When ready to cook, place the fish on the grill skin-side down and close the
    lid. Grill for about 5 minutes, or until the salmon is just cooked all the
    way through. Remove to a plate and refrigerate until cold or for several
    days. Serve with cream cheese, capers and rye bread.
    Makes 2 or 3 servings, depending on the size of the fillet.
