    grilled - White Barbequed Chicken

    8, 8 ounce, chicken breasts,
    ...bone out or in, your choice,
    ...(I prefer boneless/skinless)
    1 teaspoon salt
    1 teaspoon onion powder
    1 teaspoon garlic powder
    1 teaspoon paprika
    1 teaspoon chile powder
    Olive oil cooking spray
    1/2 cup light salad dressing or mayonnaise
    1/3 cup white vinegar
    1 tablespoon coarsely ground black pepper
    1/2 teaspoon ground red pepper
    1 1/2 teaspoons fresh lemon juice
    dash of salt

    Preheat grill to medium/hot, for left and right burners.
    If you are using the boneless/skinless, skip to *.
    For breast with the skin on, loosen the skin from
    the meat a little by inserting fingers and gently
    pushing between the skin and meat.
    *Coat boneless/skinless breasts with a little of the
    Olive oil cooking spray.
    Combine the salt, onion powder, garlic, paprika,
    and chile powder together.
    Sprinkle onto the boneless/skinless breasts or
    rub under the loosened skin breasts.
    Turn the left burner off, and keep the right burner on.
    Coat the cooking rack with the cooking spray.
    Place the chicken on the cooking rack on the right side
    of the grill. Let cook for 5 minutes on each side, or until
    browned. Then move the chicken to the left side of the
    cooking rack. Cover and cook for 35 minutes, or less if
    using the boneless/skinless breasts.
    Or until done, turning once.
    Remove the chicken from the grill. Remove the skin and throw
    it away....(now don't you think this is a waste...cooking the meat
    in the fatty skin, leaving the fat particles on the chicken, and
    then just throwing it away?)
    While the chicken is cooking make the sauce by whisking
    together the salad dressing, vinegar, black and red peppers,
    lemon juice and the salt. You can put some on the chicken towards
    the end of its cooking time or just serve it with the chicken.
    Makes 8 servings.
