    grilled - Zucchini w/Feta Cheese

    6 medium zucchini (3-1/4 lbs.), thinly sliced lengthwise
    1/3 cup olive oil
    1-1/2 teaspoons salt
    1/2 teaspoon freshly ground black pepper
    2 ounces Feta cheese, crumbled
    2 tablespoons chopped fresh dill, or 1/2 teaspoon dried dill with 2
    tablespoons chopped fresh parsley
    Fresh dill sprigs, for garnish

    Heat grill for medium/hot.
    *Note: To test for medium-hot heat, you should be able to hold your hand
    over the coals at the height of the food for 3 seconds before you have
    to pull away.

    Brush both sides of zucchini with oil; sprinkle with salt
    and pepper. Grill zucchini in batches over medium-hot* heat 4 to 6
    minutes per side, until softened and lightly charred.

    Transfer zucchini to platter; sprinkle with feta and chopped dill.
    Garnish with dill sprigs, if desired. Makes 8 servings.
