    steak - Sweet + Sour Beef #2

    3 pounds beef (bone removed)
    2 Tablespoons flour
    1 Tablespoon fat
    salt and pepper to taste
    1 cup water
    2 Tablespoons brown sugar
    1/4 cup vinegar
    6 gingersnaps or 2 slices dry lekah

    Dredge the meat in flour and brown in fat.
    Sprinkle with salt and pepper.
    Place a rack in Dutch oven type pot, under the meat.
    Add water, sugar and vinegar. Cover and simmer for
    3 to 3 1/2 hours.
    Remove meat and stir in crumbled gingersnaps.
    Stir while cooking until gravy is thick. Taste and
    adjust seasonings. Return meat to pot to heat.
    Slice and serve with mashed or boiled potatoes,
    potato kugel or pancakes.
    Makes 6 servings.
