    roast - Flavorful Beef Roast, zesty

    4 pound loin roast
    2 slices bacon, sliced fine
    2 large yellow onions, chopped fine
    6 Tbs butter
    2 cups beef broth or water
    1 Tbs paprika
    pinch of cayenne
    1/2 tsp ground allspice
    1/2 tsp ground cloves

    Heat the oven to 400 F.
    Using a small paring knife, cut incisions into the beef
    and stick a slice of bacon in each. Season the meat
    well with salt and freshly ground black pepper. Place
    the beef in a large roasting pan. Put the chopped onions
    around it. Sprinkle them and the roast with the paprika,
    cayenne, allspice, and cloves. pour about 1 cup of broth
    into the pan. Arrange the butter on top of the meat.
    Put the roast in the oven. After 15 minutes, baste the
    meat and reduce the temperature to 350 F. Cook, basting
    occasionally and adding more broth if needed, for a
    total of 2 hours (about 30 minutes per pound).
    Remove the roast to a serving platter. The sauce should
    be quite thick. You may want to increase its volume by
    adding some more broth and boiling it quickly on top of
    the stove.
    Serve with dumplings or potatoes and a vegetable such
    as cauliflower or carrots.
    Makes 6 servings.
