sweet - Apple Bread #2, Puffin Inn B+B

3 c. + 1 tsp. flour, separated
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
3 beaten eggs
2 c. white granulated sugar
1 c. vegetable oil
1 tbsp. vanilla
2 c. diced apple (without skins)
1/2 c. chopped walnuts, optional

Preheat oven to 350. Grease 2 regular loaf pans.
Mix the 3 c. flour, cinnamon, baking soda, salt, and baking powder together. Set aside.
Beat together eggs, sugar and oil.
Add vanilla and dry ingredientsto sugar mixture.
Stir in apples.
Mix walnuts in the 1 tsp. of flour and add to batter.
Pour into loaf pans and bake for 1 hour.
Makes 2 loaves.
