    List of Ingredients




    for the bread:
    1 c. brown sugar
    1/4 c. vegetable oil
    3 eggs
    1 16oz. can beets, drained, reserve liquid
    3 c. sifted flour
    2 tsp. baking powder
    1 tsp. ground cinnamon
    1/2 tsp. ground ginger
    1/4 tsp. ground cloves
    1/2 tsp. salt
    1 tsp. grated orange rind

    for the glaze:
    1/2 c. light brown sugar
    1/4 c. orange juice, not concentrated
    reserved beet liquid

    Recipe



    for the bread:
    Preheat oven to 350. Grease and flour a loaf pan.
    Beat the sugar, eggs and oil until light and fluffy.
    Puree beets in a blender/food processor until smooth and then beat into the egg mixture.
    Blend together the flour, baking powder, cinnamon, ginger, cloves and salt.
    Fold the flour mixture and orange rind into the batter, mixing well.
    Pour the batter into the loaf pan and bake for 1 hour.

    for the glaze:
    Combine and simmer all the ingredients in a saucepan, over a low heat until thickened.
    Pour over the bread while it is warm.
    Serve with cream cheese.
