    Cantaloupe Bread

    List of Ingredients

    Cantaloupe Bread

    3 eggs
    1 c. oil
    2 c. sugar
    3 tsp. vanilla
    2 c. pureed cantaloupe, (approximately 1)
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    3/4 tsp. baking powder
    2 tsp. cinnamon
    1/2 tsp. ginger
    1 c. chopped nuts, optional

    Preheat the oven to 325. Grease and flour two 9x5x3" breadloaf pans.
    Sift together the flour, salt, baking soda, baking powder, cinnamon and ginger. Set aside.
    Beat the eggs.
    Then add the oil, sugar, and vanilla.
    Add the cantaloupe puree and mix.
    Add the dry ingredients to the wet ingredients.
    Pour into the pans and bake for 1 hour or until a tester comes out clean.
