    If you’re a cheese lover, then this is the one for you.
    It travels well, which means it’s perfect for picnics.
    It makes the flavor of bacon and tomato sandwiches dance. And cut into thick slices, cooks to perfection on your grill.

    List of Ingredients




    1 tsp. sugar
    1 1/2 c. warm water
    2 1/4 tsp. or 1 pckt. active dry yeast
    1/3 c. oil
    1 tsp. salt
    1 tsp. hot sauce
    1 beaten egg
    1/2 c. freshly grated Parmesan cheese
    2 c. + 2 1/4 c. white bread flour, separated
    1 1/2 c. cubed cheddar cheese (or another one of your liking)

    You willll need two 8 1/2x4 1/2x2 3/4" loaf pans.
    Dissolve sugar in warm water in large bowl.
    Sprinkle in yeast and let stand for 10 minutes, then stir well.
    Beat in oil, salt, hot sauce and egg until smoothly blended.
    Add the Parmesan cheese.
    Stir in 2 c. of the flour and beat well.
    Add more flour until the mixture becomes too stiff to stir and cleans the sides of bowl.
    Turn out onto lightly floured board.
    Knead dough, adding more flour as necessary to make a soft dough.
    Continue kneading until dough is smooth, elastic and no longer sticky (about 10 minutes).
    Place in lightly greased bowl. Turn dough to grease the top.
    Cover with greased waxed paper and a linen towel.
    Let rise in a warm place (75°-85°) until doubled (approximately 45 - 60 minutes).
    Punch down.
    Turn out onto lightly floured board.
    Knead in the cheese cubes until well distributed.
    Divide into 2 equal portions.

    **Note:
    Make sure you grease the pans very well with shortening as cheese tends to stick when it melts.

    Shape each portion into a loaf and place, seam side down, in 2 pans.
    Cover with linen towel and let rise in warm place until dough rises 1 1/2" above the top of the pan in the center, and the corners are filled up, approximately 45 - 60 minutes.
    Bake at 375, on lower oven rack for 30 - 35 minutes.
    Remove from pans immediately and cool on wire racks.
    Makes: 2 loaves

    **Variations:
    Mini Cheese Loaves: Prepare as above, dividing dough into 6 portions.
    Shape and bake in 5x2 1/2x2" loaf pans.
    Reduce rising and baking time by approximately 10 minutes.
    OR...mix 1/2 lb. chopped, cooked bacon or ham with the cheese and work into dough.
    Or...add chopped green onions.
