Dumplings #6, German, w/potatoes
1 pound potatoes, cooked the day before
1 egg
1 teaspoon salt
2 1/2 ounces flour
fine bread crumbs
Mash potatoes.
Blend in egg, salt and flour.
Mix in Just enough bread crumbs to make a firm dough.
Roll into round balls with wet hands.
Simmer in stew, broth or lightly salted water until they float.
Note:
Do not simmer for too long or they may fall apart.
