    Depending on the humidity, you may have to add or subtract a tablespoon of water when making the dough.

    List of Ingredients




    1/2 c. warm water (100 - 110)
    1/2 tsp. active dry yeast powder
    1 tbsp. extra virgin olive oil, plus more for bowl and brushing
    1 1/3 c. flour, plus more for dusting
    3/4 tsp salt, plus more for sprinkling to taste

    Heat the grill or a grill pan until hot.
    Place the warm water in a medium bowl.
    Sprinkle the yeast on top and stir to dissolve all the yeast.
    Let sit until it gets foamy, approximately 10 minutes.
    Add the olive oil, the flour, and the salt and mix until well combined.
    Turn the dough onto a well floured surface, and knead until smooth and elastic, approximately 1 - 2 minutes.
    Place the dough in a lightly oiled bowl.
    Cover with plastic wrap, and let stand in a warm place for 30 minutes.
    Turn the dough out onto a lightly floured surface and divide into 4 equal portions.
    Roll each portion to a 1/8" thick roundness.
    Lightly brush both sides of each rolled portion with a little olive oil.
    Place the dough directly on the hot grill.
    Cook on the grill until it is golden brown, approximately 2 minutes per side.
    Remove the flatbread from the grill and season with salt to your liking.
    Makes 4 servings.
