    2 beaten eggs
    3 tbsp. salad dressing or mayonnaise
    3 c. cornmeal
    water
    oil or bacon drippings
    #6 cast iron skillet

    Recipe



    Preheat oven to 450.
    Whisk together the eggs and mayonnaise.
    Add cornmeal and add enough water, just to thin it.
    Cover the bottom of the cast iron skillet with cooking oil or bacon drippings.
    Place the cast iron skillet in the oven, and let it get hot until it is nearly smoking.
    After the oil is hot, pour this hot oil into the cornmeal mixture, stirring, and then pour into the very hot cast iron skillet.
    (This is the secret for a crisp brown cornbread.)
    Turn the oven down to 350 and bake for 30 minutes. Done when tester comes out clean.
    Keep an eye on it so as not to let the cornbread burn, but let it turn a golden brown.
