    One Pan Banana Bread

    1/3 cup vegetable oil
    1-1/2 cups ripe bananas, mashed
    3 eggs
    2-1/3 cups buttermilk baking mix
    1 cup sugar
    1/2 tsp. vanilla extract
    1/2 cup chopped nuts
    Preheat oven to 350°F. Generously grease the bottom of a 9x5 inch loaf pan.
    Combine all ingredients in prepared pan and stir with a fork until
    moistened. Beat vigorously 1 minute. Bake 55-65 minutes, or until a wooden
    toothpick inserted in center comes out clean. Cool 5 minutes. Run a knife or
    metal spatula around sides of loaf, pressing gently to loosen. Remove from
    pan.
    This recipe serves 12 people. Due to the nature of this recipe, it adjusts
    the number of servings in multiples of 12 only.
