    My husband says this is the best cornbread
    he has ever eaten. Of course, he loves anything
    that has orange in it. I added Splenda and lowered
    the normal sugar to make it more sugar-free.

    List of Ingredients




    Orange Cornbread

    1/2 cup extra light/virgin Olive oil
    2 large eggs
    1/2 cup white granulated sugar, or
    ...(1/4 cup sugar and 1/4 cup Splenda)
    1/2 cup fresh orange juice
    1 1/4 cups flour, spooned and leveled
    1/2 cup cornmeal
    2 teaspoons baking powder
    1 teaspoon salt
    finely grated zest of 1 orange

    Preheat oven to 375 degrees F. Coat bottom
    of 8 inch round cake pan with cooking spray.
    In large bowl, whisk together oil, eggs, sugar,
    and orange juice until smooth. Add rest of
    ingredients and whisk to combine. Pour into
    pan and bake for 25 minutes.
    Makes 8 servings.
