    Pear Bread

    1 2/3 c. finely chopped pears
    (about 2 pears)
    1 c. packed brown sugar
    3 eggs, well beaten
    1 tsp. ginger
    2/3 c. milk
    1 tsp. cinnamon
    1 1/2 c. vegetable oil
    1 tsp. salt
    1/2 c. chopped walnuts, optional
    2 1/2 c. flour
    1 c. quick oatmeal
    5 tsp. baking powder

    Preheat oven to 350. Grease bottom of 9x5" loaf pan.
    Mix pear, sugar, eggs, milk, oil and nuts together.
    Combine ginger, cinnamon, salt, flour, oats and baking
    powder; add to pear mixture.
    Stir until dry ingredients are just moistened.
    Pour into pan.
    Bake for 1 hour and 10 minutes or until toothpick comes
    out clean.
    Cool 10 minutes. Remove from pan and cool on wire rack.
