    List of Ingredients




    1 1/2 c. flour
    1 tsp. ground cinnamon
    1/2 tsp. salt
    1/2 c. raisins
    1/2 c. chopped walnuts, optional
    2 eggs
    3/4 c. white sugar
    1/2 c. vegetable oil
    1 c. persimmon pulp
    1 tsp. baking soda

    Recipe



    Preheat oven to 325. Grease a 9x4x2" baking pan.
    Place the flour, cinnamon, salt, raisins and nuts in a small bowl and stir. Set aside.
    Blend the eggs, sugar and oil together in a large bowl.
    Mix the baking soda into the pulp.
    Add the pulp to the sugar mixture.
    Fold the flour mixture into the sugar mixture.
    Pour the batter into the baking pan.
    Bake for 75 minutes, or until a tester inserted in the center comes out clean.
    Makes 1 loaf.
