Pumpkin Muffins #2
1/2 cups + 1 1/2 Tablespoons granulated white sugar
6 Tablespoons melted butter
2 large eggs
1 cup solid pack canned pumpkin
1/2 cup milk
1/2 cup raisins, optional
1/2 cup chopped dates, optional
1/2 cup chopped walnuts, optional
1 1/2 cups flour
2 Tablespoons baking powder
1/2 teaspoon salt
1 teaspoon. + 1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
Heat oven to 400 degrees F.
Grease 18 muffin cups or use paper liners.
Mix the flour, baking powder, salt, the 1 tsp. cinnamon, cloves
and ginger together in a large bowl and set aside.
In a large bowl, beat together the 1/2 c. sugar and the butter.
Add the eggs, pumpkin, and milk and mix well.
Mix in the raisins, dates and nuts.
Add the wet mixture to the dry mixture, and combine, using as
few strokes as possible, until just moistened.
Fill the muffin cups 2/3 full.
Mix the 1 1/2 tablespoon sugar and the 1/4 teaspoon cinnamon
together and sprinkle over the tops of the muffins.
Bake for 20 minutes or until a tester comes out clean.
Makes 18 muffins.
