    Sweet Brown Bread

    1/2 cup yellow or white cornmeal
    1 1/2 cups white or unbleached flour
    1 cup rye flour
    1 cup whole wheat flour
    1 cup brown sugar
    1 cup molasses
    2 teaspoons baking soda
    1/2 teaspoon salt
    2 cups buttermilk
    1 cup broken walnuts, optional
    1 cup raisins, optional

    Do not preheat the oven for this recipe. Need oven cold.
    Grease a Dutch oven size pan or 2 casserole dishes with lids.
    Use a large bowl and place the cornmeal, all the flours, sugar,
    molasses, baking soda and salt in it.
    Pour in the buttermilk and mix until well blended.
    If using: add the walnuts and raisins and stir to combine.
    Pour the batter into the pan/dishes and place in a COLD oven.
    Turn temperature to 350 and bake for about 1 hour.
    Use a tester for doneness. If it comes out clean, and dry, it is done.
    If anything clings, continue to bake for 5 - 10 minutes.
    Remove from the oven and let cool in the pan/dishes for 10 minutes.
    Remove the bread from the pan and place on wire rack to cool.
    If using a convection oven, reduce the heat 50 degrees.
