This recipewas developed to make use of the various
fruit butters which are so popular in Lancaster County.
It mixes up quickly, makes two loaves, and freezes well.
It's tasty when served with breakfast, or with afternoon tea.

sweet - Apple Butter Bread #2*
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine
1 cup sugar
1 egg
1 cup apple butter
1 3/4 cups all-purpose flour
1 teaspoon vanilla extract
2 tablespoons lemon juice
2/3 cup evaporated milk (one 5 oz. can)
Heat oven to 350 degrees F.
Grease 2, 8x5x4 or 9x5x4 inch loaf pans
In small bowl stir together flour, baking powder, soda & salt; set aside.
In medium bowl beat butter with electric mixer on medium speed for
30 seconds.
Add sugar; beat till fluffy.
Add egg; beat well.
Beat in apple butter & vanilla.
Stir lemon juice into milk; mixture will curdle.
Add flour mixture to apple butter mixture alternately with milk mixture,
beating on medium speed after each addition just till combined. Do not
overbeat.
Pour into loaf pans and bake for about 25 minutes, until a toothpick
inserted in center comes out clean. Cool on wire racks.
