    sweet - Lemon Bread Loaf

    2 1/2 cups sifted flour
    1 tablespoon baking powder
    1 teaspoon salt
    1/3 cup unsalted butter
    1 cup + 1/4 cup granulated white sugar, separated
    2 tablespoons finely grated lemon peel
    2 eggs
    1 cup milk
    1/3 cup lemon juice

    Heat oven to 325 degrees F.
    Sift together flour, baking powder and salt.
    Cream butter with 1 cup sugar and lemon peel in a
    large bowl.
    Add eggs one at a time, mixing well after each addition.
    Sift in flour mixture in 3 parts, alternating with 1/3's
    of milk. Mix well.
    Pour into a well-greased 9x5x3 inch loaf pan.
    Bake for 60 - 70 minutes, until a tester comes out clean.
    Just before removing cake from oven, heat lemon juice
    with remaining 1/4 cup sugar in a small saucepan until
    sugar dissolves.
    As soon as cake is done, pierce the top all over with
    tongs of cooking fork or a long thin needle.
    Pour lemon juice mixture over top.
    Let cool on a wire rack for 1 hour.
    Remove from pan and let cool on rack 2 hours longer
    before serving.
