sweet - Pumpkin Bread #5
2/3 cup butter flavor shortening
2 2/3 cup granulated white sugar
4 eggs
1, 29 ounce can solid pack pumpkin
2/3 cup water
3 1/3 cups flour
2 level teaspoons baking soda
1 1/2 teaspoon salt
1/2 level teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2/3 cup chopped nuts of choice
1/2 cup raisins, optional
Heat oven to 325 degrees F.
Grease 2 regular bread loaf pans or 4 coffee cans.
Mix shortening and sugar together.
Blend in the eggs, pumpkin and water.
Stir together the flour, baking soda, salt, baking powder,
cinnamon, ginger and cloves. Mix into pumpkin mixture.
Add the nuts or raisins and stir.
Pour into the pans.
Bake the bread pans for 1 hour 10 minutes, less for the
coffee cans.
The coffee can baked bread makes a nice gift size at
Christmas, also pretty sliced, as the slices are round.
