scratch - Apple Pie Coffee Cake
for the cake + filling:
5 c. sliced apples, medium thickness
1/8 c. white granulated sugar
1/2 tsp. + 1 1/2 tsp. ground cinnamon
3/4 c. egg substitute
3/4 c. fat free sour cream
1/4 c. water
1 tbsp. I Can't Believe It's Not Butter Light
1 tsp. vanilla extract
1 18 1/4oz. pkg. yellow or spice cake mix
1 c. packed light brown sugar
for the glaze:
2/3 c. powdered confectioners sugar
2 tsp. fat free milk
Preheat oven to 350. Coat a 10" tube or bundt pan with non stick cooking spray.
for the cake + filling:
Mix the apples, white sugar and 1/2 tsp. of the cinnamon together in a bowl.
Cook, covered, in the microwave for 8 - 10 minutes, or until the apples are semi tender.
Set aside 1 1/2 c. of the pie filling you just made.
Set aside 1 tablespoon of the cake mix.
Use a large bowl to combine the egg substitute, sour cream, water, butter light, vanilla and the remaining cake mix and the remaining apple mixture. Beat together to mix well.
Pour 1/2 of the cake batter into the tube pan.
Combine the brown sugar, the 1 1/2 tsp. cinnamon and reserved cake mix together and sprinkle over top of the batter.
Spoon the 1 1/2 c. pie filling over top of that to within 3/4" of the edges. Then top with the remaining batter.
Bake for 40 - 45 minutes or until a tester comes out clean.
Cool for 10 minutes in the pan, then remove from the pan to a wire rack.
for the glaze:
Use a small bowl and combine glaze ingredients until smooth. Drizzle over top of the cooled cake.
Makes 14 servings.
Variations:
Use a chocolate or yellow cake mix with a light cherry pie filling.
Or a yellow or white cake mix with a peach or strawberry pie filling.
