    cakemix - Strawberry Cake + Icing, best

    for the cake:
    1 box white cake mix
    1 3oz. box strawberry gelatin
    1/2 c. vegetable oil
    1/2 c. milk
    4 eggs
    1 c. fresh sliced strawberries
    1 c. coconut, optional
    1 c. walnuts or pecans, optional

    for the icing:
    1 lb box confectioners sugar
    1/2 c. butter, melted (1 stick)
    1/2 c. diced walnuts or pecans, optional
    1/2 c. chopped strawberries
    (may need a little juice, can add sugar to make)
    1/2 c. coconut, optional

    Preheat oven to 350. Grease and flour 3 round pans or one 9x13x2" oblong pan.
    Stir the cake mix and gelatin together.
    Blend in oil and milk.
    Add eggs, one at a time. Beat until eggs are combined well.
    Fold strawberries, coconut and nuts into the batter. Pour into cake pan(s).
    Bake for 30 - 35 minutes.
    Refrigerate or store in a cool place.
    This cake will keep 2 weeks or more.

    Strawberry Icing

    Mix all ingredients together.
    Frost cake when cool.
    Icing is very rich.
