    cakeMix - Cantaloupe Angel Cake

    2 medium cantaloupes, seeded, peeled, sliced, and cut into chunks
    1 box of 2 step angel food cake mix
    1, 8 ounce container frozen whipped topping, thawed
    1/2 teaspoon vanilla extract
    powdered confectioners sugar
    cantaloupe balls for garnish

    Heat oven to 350 degrees F.
    Need a clean 10 inch angel food cake pan.
    Place chunks in blender or food processor.
    Puree enough to make 2 cups.
    Pour out 1/4 cup and set aside.
    Empty contents of egg white packet from cake
    mix into mixer bowl.
    Carefully blend in the 1 3/4 cups of puree.
    Beat on highest speed, until stiff peaks form
    and until the spatula will stay upright by itself.
    Reduce speed to low.
    Sprinkle in cake flour packet mixture until just thoroughly mixed.
    Pour into cake pan and bake according to package directions.
    Let cool according to package directions.
    Mix the 1/4 cup puree and vanilla extract with
    enough confectioners sugar to make a drizzling consistency. Drizzle over cake.
    Makes 12 servings.
    sprigs of mint for garnish
