    scratch - Pear Cake

    5 medium pears, cit in halves and cored
    1 tsp. + 1/2 tsp. ground cinnamon, separated
    1/2 c. apple juice or white wine
    1 3/8 c. flour
    2 tsp. baking powder
    1 heaping tbsp. cocoa
    1 pinch ground nutmeg
    4 heaping tbsp. oats
    6 tbsp. milk
    4 tbsp. rum flavoring or rum
    3/4 c. butter
    3/4 c. sugar
    3 eggs
    2 tbsp. powdered confectioners sugar

    Preheat oven to 400. Grease and flour a 7 inch spring form pan.
    Place pear halves, core side up, in a frying pan.
    Sprinkle the pear halves with the 1 tsp. cinnamon.
    Pour in the apple juice.
    Bring to a boil, cover, and cook for about 5 minutes. Drain and set aside.
    Sift flour baking powder, cocoa, nutmeg, the 1/2 tsp. of the cinnamon and the oats together. Set aside.
    Mix the milk and rum flavoring together and set aside.
    Beat the butter and sugar until creamy.
    Add the eggs and continue to beat.
    Blend in the sifted ingredients, alternately with the milk mixture.
    Pour 2/3 of cake mixture into the pan and spread evenly.
    Arrange the pear halves on top of that batter, with the core side facing down.
    Pour the rest of the batter over top.
    Bake for about 60 minutes or until a tester comes out clean.
    Turn onto a rack to cool.
    Dust with powdered confectioners sugar, if desired.
