    scratch - Sauerkraut + Beer Fudge Cake

    for the cake:
    1 1/2 c. sugar
    2/3 c. shortening
    3 eggs
    1 1/4 tsp. vanilla
    1/4 tsp. salt
    1/2 c. cocoa
    2 1/4 c. flour
    1 tsp. baking soda
    1 tsp. baking powder
    1 c. room temperature beer
    1/2 - 2/3 c. rinsed, drained finely chopped sauerkraut

    for the frosting:
    6 oz. pkg. chocolate chips
    1/4 c. butter
    2 1/2 c. sifted powdered confectioners sugar
    3 tbsp. scalded milk
    1 tsp. vanilla
    1 egg
    1 1/2 c. miniature marshmallows
    1 c. chopped walnuts

    for the cake:
    Preheat the oven to 375. Grease and flour a 13x9x2" pan.
    Cream together the sugar and shortening.
    Add the eggs and beat well.
    Add the vanilla, salt and cocoa and mix well.
    Sift together the flour, baking soda and baking powder.
    Add the flour mixture and beer, alternately to the creamed mixture and mix well.
    Fold the sauerkraut in by hand.
    Pour into pan and bake for 35 to 45 minutes. Cool completely before frosting.

    for the frosting:
    Melt the chocolate chips in the tope of a double boiler, over hot, but not boiling water.
    Mix the butter, sugar, milk and vanilla together in a bowl.
    Beat in the egg and mix well.
    Add the chocolate and stir until blended.
    Fold in the marshmallows and nuts.
    Frost the cooled cake.
