scratch - Tea Cakes #2, in cupcakes
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
2/3 c. sugar
1/4 c. butter, (1/2 stick)
1 egg
1 tsp. vanilla
1/2 c. milk
Preheat oven to 375. Coat muffin tin with cooking spray.
Sift together the flour, baking powder and salt. Set aside.
Cream the sugar, butter, egg and vanilla together.
Add the flour mixture alternately with the milk.
Fill muffin tin and bake for 15 - 20 minutes . Check at 10
minutes in case oven heat is variable.
Can add food color or flavor to suit and try adding some raisins, too.
May frost with lemon or almond icing or drizzling.
