    scratch - White Fruit Cake

    for the fruit mixture:
    1 lb. mixed candied fruit
    1 lb. box white raisins
    1 c. coarsely chopped apricots
    1 lb. box finely cut dates
    2 c. almonds, optional
    1 c. flaked coconut

    for the cake mixture:
    1 1/2 c. chunk canned pineapple
    1 c. shortening
    1 1/2 c. sugar
    7 eggs
    1 tsp. almond flavoring
    3 c. flour, (use 1 c. to dredge the fruit)
    2 1/2 tsp. baking powder
    1 tsp. salt
    6 1/2 tbsp. pineapple juice

    Preheat the oven to 350.
    Lightly grease pan(s) with softened butter or
    butter flavored shortening.
    Mix all the fruits together.
    Then add the 1 c. of flour and stir. Set aside.
    Mix the flour, baking powder and salt together in a bowl. Set aside.
    Cream the shortening.
    Add the eggs, one at a time until blended in well.
    Add the sugar and beat until smooth.
    Add the pineapple juice and mix well.
    Add the flour mixture until blended.
    Fold in the chunked pineapple.
    Finally add the fruit mixture.
    Bake for 2 1/2 - 3 hours.
