    List of Ingredients

    scratch - Egg Yolk Sponge Cake + Frosting

    for the cake:
    11 egg yolks ( 3/4 cup)
    1 whole egg
    1 3/4 cups sugar
    1/2 cup cold water
    1/2 teaspoon lemon extract or lemon juice
    2 cups sifted all purpose flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 tablespoon strained orange juice
    1 tablespoon grated orange rind

    for the frosting:
    3 cups sifted powdered confectioners sugar
    1/3 cup soft butter or margarine
    3 tablespoons lemon or orange juice
    orange or lemon rind, optional for extra flavor

    for the cake:
    Preheat oven to 325.
    Use an ungreased 10 inch tube pan or grease the bottom only of a
    13x9x2 inch oblong pan.
    Beat until thick (at least 5 minutes) the egg yolks and the whole egg.
    Beat sugar in gradually.
    Stir together the flour, baking powder and salt together. Set aside.
    Stir together the water, lemon extract, orange juice and orange rind.
    Mix the dry ingredients alternately into the egg/sugar mixture, with
    the liquid ingredients.
    Pour into your pan of choice.
    Bake for 60 - 65 minutes in the tube pan or 35 - 40 minutes in oblong pan.

    for the frosting:
    Beat together until smooth. Frost cake.
