    scratch - Apple Butter Cupcakes

    batter:
    1 3/4 cups all purpose flour
    1 1/2 teaspoons baking powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup butter
    1 cup sugar
    1 egg
    1 cup apple butter
    1 teaspoon vanilla
    2 Tablespoons lemon juice
    2/3 cup evaporated milk

    frosting:
    1/2 cup butter
    1 cup packed brown sugar
    1/4 cup milk
    3 1/2 cup powdered confectioners sugar

    Heat oven to 350 degrees F. Grease or paper line muffin
    tins.
    batter:
    In a small mixing bowl stir together flour, baking powder,
    baking soda, and salt; set aside. In a medium mixing bowl
    beat butter with an mixer on medium speed for 30 seconds.
    Add sugar; beat until fluffy. Add egg; beat well. Beat in
    apple butter and vanilla.
    Stir lemon juice into milk. It will curdle.
    Add flour and milk mixtures, alternately, with apple butter
    mixture, beating on low to medium speed after each addition
    just until combined. Fill muffin cups 2/3's full. Bake for
    20 to 25 minutes or until a tester inserted in the centers
    comes out clean. Let cool on wire racks.

    frosting:
    Melt the butter in a small saucepan. Stir in sugar and cook
    until bubbly, stirring constantly. Remove from heat.
    Add milk and stir until smooth. Add sugar and beat by hand
    until of spreading consistency. Frost immediately.
    (If thickens, stir in hot water, a few drops at a time, until
    of spreading consistency again).
    Makes 24 cupcakes.
