scratch - Apple Dapple Cake
for the cake:
3 eggs
1 1/2 cups salad oil
2 cups sugar
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon soda
2 teaspoons vanilla
3 cups chopped apples
1 1/2 cups chopped pecans
for the topping:
1 cup firmly packed brown sugar
1/4 cup milk
1/2 cup margarine or butter
for the cake:
Mix eggs, oil and sugar; blend well.
Combine flour, salt, and soda.
Add vanilla, apples, and nuts.
Pour into greased 8 or 9 inch tube pan or an oblong pan works well, too.
Bake 1 hour at 350 degrees.
While cake is still in pan and hot, pour the hot topping over it. (note, I
take a fork and punch a few holes in the top for the topping to run down
into the cake.)
When completely cool , remove cake from pan.
for the topping:
Combine all ingredients and cook for 2 and 1/2 minutes.
Pour immediately over cake in pan.
