    scratch - Cranberry Sauce Cake, extra moist

    3 c. flour
    1 c. sugar
    2 tsp. baking soda
    1 tsp. salt
    1 lb. can whole cranberry sauce
    1/2 c. chopped walnuts
    1 c. real mayonnaise, not salad dressing
    1/2 c. orange juice

    Grease and flour tube pan.
    Heat oven to 350 degrees F.
    Place dry ingredients in large bowl.
    Reserve 1/4 cup cranberry sauce for frosting.
    Add remaining cranberry sauce, nuts, and mayonnaise
    to dry ingredients. Mix well.
    Stir in orange juice.
    Pour into tube pan.
    Bake for 1 hour or until toothpick comes out clean.
    Remove from pan in about 10 minutes.
    Frost after cake cools with:
    2 cups powdered confectioners sugar
    1/2 cup of the reserved cranberry sauce
    Beat until creamy.
