    scratch - Vanilla Cupcakes w/Frosting

    1 3/4 cups flour
    1 Tablespoon baking powder
    1/4 teaspoon salt
    1/2 cup butter, at room temperature
    1 1/2 cups granulated white sugar
    4 large eggs
    2 teaspoons pure vanilla extract
    3/4 cup milk
    grated citrus zest or coconut flakes for garnish
    for the frosting:
    1/2 cup butter, at room temperature
    2 cups powdered confectioners sugar
    2 Tablespoons milk
    1/2 teaspoon vanilla

    Heat the oven to 350 degrees F.
    Line a muffin tin with giant, baking papers.
    Place the flour, baking powder and salt in a bowl and whisk to combine.
    In another bowl, beat together the butter and sugar until well combined.
    Beat in the eggs one at a time.
    Mix in the vanilla.
    Gradually mix in the dry ingredients alternately with the milk until just combined.
    Spoon the batter into the baking cups, filling right to the top.
    Bake for 22 to 25 minutes.
    Cool to room temperature and then remove cupcakes from the muffin tin.

    Mix frosting ingredients until well combined and lightened.
    Pipe or spread on top of the cupcakes.
    Decorate with citrus zest and/or coconut flakes.
    Chill until ready to serve.

    Options:
    Instead of citrus zest and/or coconut, try topping these cupcakes
    with sliced fresh strawberries, blueberries, blackberries and/or
    raspberries right after you’ve frosted them,
    Or
    Replace the frosting with with lightly sweetened whipped cream.

    43.8g carbohydrate, 0.6g dietary fibre, 84mg cholesterol, 205mg sodium.
