scratch - Washington Pie Cake #1
1/3 cup butter
1 cup sugar
2 eggs well beaten
1 3/4 cups. flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 teaspoon vanilla
raspberry jam
powdered confectioners sugar
Heat oven to 350 degrees F. Lightly grease and flour
2 cake pans.
Cream the butter and add half the sugar gradually.
Add the remaining sugar to the egg. Combine the two.
Mix and sift the flour, baking powder and salt.
Add alternately with milk to the sugar mixture.
Add vanilla.
Divide into pans and bake for 30 minutes.
(May also bake it all in a cast iron skillet and then cut
it in half to fill. Will have crisper crust.)
Let cool. Then place one of the cakes on a serving plate.
Spread with a layer of raspberry jam.
Place the other cake on top and and dust with some
confectioners sugar.
