Buttermilk Candy

Buttermilk Candy

2 c. sugar
1/2 tsp. baking soda
2 tbsp. white corn syrup
1/4 c. butter, (1/2 stick)
1 c. buttermilk
1 tsp. vanilla
2 c. chopped pecans, or another nut, optional

Mix the sugar, baking soda, syrup, butter and buttermilk together in a large pan.
Start with a medium/high heat.
Stir sides and bottom so it does not burn.
Boil for about 2 minutes an then reduce the heat to medium/low.
Cook to firm ball stage.
Remove from heat and let cool.
Add the vanilla and nuts.
Beat and pour on to waxed paper.
Let cool and then cut into squares.
