Chocolate Covered Cream Cheese
2 pounds cream cheese
1, 12 ounce package milk chocolate chips
2 tablespoons vegetable shortening or paraffin wax
Line a baking sheet with wax paper.
Cut cream cheese into equal pieces.
Place them on a baking sheet, cover, and refrigerate overnight.
Melt the chocolate chips and shortening over low heat, stirring constantly. Remove from the heat.
Hold each piece over pan in a slotted spoon and spoon the chocolate over the piece, coating completely and allowing the excess chocolate to drip back into the saucepan.
Return to the baking sheet; refrigerate for 2 hours, or until the chocolate and cream cheese are solid.
Keep refrigerated until ready to eat.
