    Coffee Fudge

    Coffee Fudge

    1 c. s t r o n g coffee
    2 c. white sugar
    1 tbsp. cream
    1 tbsp. butter
    1/8 tsp. salt
    1/4 tsp. cream of tartar
    1/2 tsp. vanilla extract or 1/2 tsp. cinnamon, your choice
    1 c. chopped nuts, optional

    Butter an 8x8x2 or 9x9x2 inch baking pan, depending on the thickness you desire.
    Bring the coffee to a boil in a large, heavy saucepan. (Non stick would be good if you have it.)
    Remove from the heat and stir the sugar, cream, butter, salt and cream of tartar in until dissolved.
    Return to heat and cook quickly, stirring constantly until it comes to a boil.
    Cover and cook for about 3 minutes, until the steam washes down any crystals that may have formed on the sides of the pan.
    Uncover and cook over a medium heat to soft ball stage, 234 on thermometer.
    Remove from the heat and let cool to 110.
    Add the vanilla and beat until the mixture begins to get solid.
    Mix in the nuts and pour into the baking pan.
    Let cool and harden before cutting into squares.
    Makes about 1 pound.
