    Old Time Cocoa Fudge

    Old Time Cocoa Fudge

    1/3 c. cocoa
    3 c. sugar
    1/8 tsp. salt
    1 1/2 c. milk
    6 tbsp. light corn syrup
    1/4 c. butter
    1 tsp. vanilla extract
    1 c. chopped pecans, optional

    Butter a 9x9x2 inch pan.
    Mix together the cocoa, sugar, and salt in a 3 quart saucepan.
    Add the milk and corn syrup and mix thoroughly.
    Bring mixture to a boil on a high heat setting, stirring frequently so it does not scorch.
    Reduce to a medium heat and continue to boil until it reaches 234 degrees, or until a small amount of mixture forms a soft ball when dropped into cold water.
    Remove from the heat. Add the butter and vanilla extract.
    Allow mixture to cool undisturbed about 15 minutes.
    Beat with spoon by hand until thick. Stir in the nuts if using.
    Quickly pour the fudge into the pan and let cool.
    Cut into 16 pieces.
