    Pumpkin Candy

    1 quart fresh pumpkin, cubed
    1 cup packed brown sugar

    Put pumpkin cubes in pan and cover with water.
    Bring to a boil and cook 15 to 20 minutes.
    Drain, but save, the liquid - approximately 1 1/2 cups.
    Mix liquid with brown sugar.
    Pour over pumpkin and boil for another 15 minutes.
    Let pumpkin pieces stand overnight in the syrup.

    The next day, boil pumpkin pieces for another 5 minutes,
    then take them from the syrup and set them on a waxed
    paper lined tray.
    Set in the sun to dry (be aware of bugs). After about 10 hours,
    roll in granulated sugar.

    OR
    Place in a 140 degree oven for 3 to 4 hours to dry.
