Bacon + Potato Casserole

List of Ingredients
4 pounds scrubbed, diced new red potatoes, skins on
1 teaspoon salt
1 diced garlic clove
1/2 cup melted butter, (1 stick)
2 teaspoons dried parsley, or 2 tablespoons freshly chopped
1 tablespoon diced pimento
1/2 teaspoon crushed red pepper
2 1/2 cups grated sharp Cheddar cheese
3/4 pounds crisply fried and crumbled baconRecipe
Boil the potatoes with the salt and garlic until fork tender. Drain.
Mix butter, parsley, pimento, and red pepper together. Add to
potatoes and toss. In a 9x13 inch or 3 quart baking/casserole dish,
layer 1/2 of the potatoes, 1/2 of the cheese, 1/2 of the bacon.
Repeat layers and bake at 350 degrees F for 20 - 30 minutes or
until bubbly.
