    Bacon + Spanish Rice Casserole

    1/4 pound bacon
    1/2 cup onion, chopped
    1/2 cup celery, chopped
    1/4 cup green pepper, seeded and chopped
    2 cups rice, uncooked
    2, 16 ounce cans chopped/diced tomatoes
    3 teaspoons salt
    1/2 teaspoon ground blackpepper
    1 teaspoon granulated white sugar
    drop of hot sauce

    In a large frying pan, fry bacon until crisp. Drain on paper towels.
    Crumble and reserve.
    In the same pan, saute onions, celery, and green pepper until tender.
    Add rice, tomatoes, crumbled bacon, and seasonings.
    Cook on top of stove for 10 minutes.
    Pour into large, greased casserole dish. Cover tightly and bake at
    350 degrees for 1 hour.
    Makes 8 servings.
