    Fried Ravioli Casserole

    1, 13 ounce package frozen cheese ravioli, about 30
    2/3 cup + 1/3 cup sour cream, divided, (may use fat free)
    1/3 cup milk (may use skim)
    3/4 cup Italian breadcrumbs
    2 tablespoons grated Parmesan cheese
    1 teaspoon + 1 tablespoon dried parsley, divided
    1/4 teaspoon ground black pepper
    1/4 cup premade pesto, (homemade or store bought)
    1 tablespoon lemon juice

    Cook the ravioli according to the package directions. Drain.
    Preheat oven to 400 degrees F.
    Coat nonstick baking sheet with cooking spray.
    In a bowl, combine the 2/3 cup sour cream with the milk.
    In a separate bowl combine the breadcrumbs with the
    Parmesan, the 1 teaspoon of parsley and black pepper.
    Pat ravioli dry if necessary, then dip into the sour cream mixture.
    Shake off any excess. Coat with the breadcrumb mixture.
    Arrange on the baking sheet. Coat with cooking spray.
    Bake for 10 - 13 minutes, until golden.
    Combine the pesto with the lemon juice, the 1/3 cup of sour
    cream and the 1 tablespoon of parsley.
    Serve sauce over the ravioli.
    Bake until hot and bubbly.
